Lemay Marinated Trout
1 to 1 1/2 lb trout fillet
1/4 c. freshly squeezed lemon juice
1 1/4 c. oil
100 ml jar capers and liquid
1 onion - minced or rings
Salt and pepper to taste
Use a mixture of olive and canola oils - Selection Mérite. Marinate for a minimum of one day. Serve on a bed of lettuce or with crackers.
Store remaining trout in fridge.
